Penny Kopp, age 60 of Appleton, passed into the loving arms of Jesus on Wednesday morning, May 3, 2017, surrounded by her loving family. Penny was born in Kenosha on Christmas Day of 1956, daughter of the late Anthony and Ruby (Remmel) Van Strien. She was a graduate of Kenosha Bradford High School, and studied Horticulture at the Fox Valley Technical College. On June 21, 1975, she married Ed Kopp in Kenosha. Together, the couple shared forty-one happy years together, and were blessed with two children and five grandchildren. Some of Penny's greatest joys came from working with her hands, doing just about anything artistic. She loved traveling to craft fairs with her treasures. She was also a gifted gardener who enjoyed the company of her dogs and traveling in the RV with Ed. More than anything, she was blessed to be mother to two wonderful children and their families. Penny is survived by her husband: Ed Kopp of Appleton, two children: Heather (Matthew) Meadows of Elk Grove, California, and their children Madelyn, Chelsea, and Kylie; and James (Nicole) Kopp of Appleton and their children Emily and Ethan. She is also survived by a brother: Gary (Jan) Van Strien of Nekoosa; a sister-in-law: Patricia Van Strien of Kenosha; two brothers-in-law: Richard (Tracy) Kopp of Kenosha and Michael (Jennifer) Kopp of Caledonia; and her mother-in-law: Gertrude Kopp of Kenosha. Penny was preceded in death by her parents, a brother: Gene Van Strien, and her father-in-law: Alfred Kopp. A memorial service for Penny will be held at 11:00 AM on Monday, May 8, 2017 at GOOD SHEPHERD LUTHERAN CHURCH, 2220 E. College Avenue in Appleton, with Rev. Dr. Martin Koeller officiating. Family and friends are invited to gather at the church on Monday morning from 9:00 AM until the time of the service.
